How to Make a Carrot Cake

You will also need:
* 3 medium eggs
* 105ml vegetable oil or 110g melted butter
* 200ml water or milk
* Handful of finely chopped walnuts or pecans to decorate
Preheat oven to 180°c (160°c fan)/gas mark 4. Make the cake mix according to the packet instructions. Line 2 7” round cake tins with baking paper on the base and around the sides. Bake in the oven for approximately 30 minutes or until a skewer inserted into the centre of the cake comes out clean.
Let the cakes cool in the tins for 10 minutes before turning them out onto a cooling rack.
When the cakes are cold, sandwich them together with cream cheese frosting on a cake board. Cover the whole cake with a thin covering of frosting and smooth with a cake scraper. Chill the cake in the fridge for 1 hour. Remove the cake from the fridge and add another layer of frosting, smoothing as before.
Decorate the cake with edible carrot toppers and finely chopped nuts.
Top Tip: you can add chopped pecans or walnuts into the cake mix before baking for extra crunch!
Your delicious carrot cake is now complete and ready to eat!
