Who can resist the lure of a coveted malteser bunny when they hit the shops? We definitely can't, so we thought we'd better find a good excuse to eat more of them – et voila, malteser bunny cupcakes were born!

Cupcakes of your choice

Malteser Bunnies – available in store

Moss biscuits (see separate recipe)

Betty Crocker chocolate fudge icing

Renshaw Ready to Roll icing in orange and green

Daisy plunger cutter

Palette knife

Bowl

Rolling pin

Sharp knife

Step 1

Use a small palette knife to spread a dome of chocolate icing on top of your cupcakes.

Step 2

Dip the cupcake into a bowl of crumbled up moss cookies to completely cover the chocolate icing.

Step 3

Add a Malteser Bunny to the cupcake, pushing it into the moss slightly.

Step 4

To make the carrot, roll a tiny cone shape of the orange icing. Use a sharp knife to score lines around the carrot. Thinly roll out a piece of green icing and use the smallest Daisy plunger cutter to cut out the carrot top. Attach to the carrot with a little dot of water and push the carrot into the moss.

Top Tip!

You could also add little flowers to your cupcake, or chocolate mini eggs – even little pink noses for the bunnies!
