You will also need:

* 200g/8oz softened butter

* 150g/6oz caster sugar

* 2 large egg yolks

* 400g/14oz plain flour, plus extra for dusting surface

* Grated zest of 1 lemon or 1 tsp vanilla extract/other flavouring of your choice

* 2-4 tbsp milk

Method:

Measure the butter and sugar into a bowl along with the zest and beat together until light and fluffy. Beat in the egg yolks. Sieve in the flour and add enough milk to give a fairly soft dough. Bring together, using your hands then wrap and chill in the fridge for 1 hour.

Preheat the oven to 180C/350F/Gas 4. Line two baking trays with baking parchment.

Step 1

Remove from the fridge and roll out on a lightly floured work surface to a thickness of about 5mm/¼in. Cut out your shapes and bake in the preheated oven for 10-12 minutes, or until pale golden-brown.

 

Cloud: Use the flower cutter to cut out flower shapes from the dough. Use a ruler and a pizza wheel to cut each flower in half to make 2 clouds.

 

Star: Use the star cutters to cut out the dough.

 

Moon: Use the 8cm round cutter to cut out discs from the dough. Remove a section from the disc using the 6.5cm round cutter to make a crescent moon shape.

 

Mountain: Use a ruler and pizza wheel to cut out tall triangle shapes – (small: 7cm at base x 9cm tall) (large: 9cm wide x 12.5cm tall) cut out paper templates so that you can use them to cut out the icing too.

Step 2
Transfer the biscuits to a cooling rack. When the biscuits are completely cold use a variety of coloured fondant icing to decorate the biscuits.

Repeat the dough cutting method with coloured icing (approximately 3mm thin) to decorate.

Use edible glue to attach the icing to the biscuit.

Use the star cutter to cut out the coloured icing (approximately 3mm thin) to decorate. Use edible glue to secure the icing in place.

Pipe a drizzle of royal icing over half of the star and scatter over white edible glitter whilst the icing is wet. Tip off any excess glitter to give a sparkling finish.

Using the paper template, cut out the icing to 3mm thin.

Use edible glue to attach the icing to the biscuit.

Use a brush to give your mountains snowy peaks of royal icing.

Scatter over white edible glitter and tip off the excess.

Pipe tiny white dots on the mountains for a snowy effect.

Cover each biscuit with 3mm thin white fondant (use the same method as used to cut the biscuits) using edible glue to secure it in place.

Pipe an outline with royal icing in a piping bag fitted with a writer nozzle.

Draw on eyes and a mouth with edible black pen and add a light dusting of pink lustre dust with a fluffy brush to give your cloud rosy cheeks.
