I love creating alternative trick or treat gifts at Halloween, and these cat cookies certainly tick that box. Made using a chocolate biscuit dough and then simply decorated using ready-to-roll icing.

Ingredients:

Dough recipe (makes 20 to 30)

225 grams unsalted butter, softened

200 grams caster sugar

115 grams light brown sugar

Two small eggs, cold

375 grams plain flour, sifted

70 grams cocoa powder, sifted

Half a teaspoon of salt

One teaspoon Vanilla extract

Step-1

In an electric mixer fitted with paddle attachment, cream together the butter and sugars for approximately five minutes until fluffy and pale. Beat in eggs until just combined.

Step-2

Add flour, cocoa, salt and vanilla and mix on low speed until thoroughly combined. Wrap the dough in cling film and chill in fridge for 45 minutes before rolling out on a floured surface.

Step-3

Roll out dough to a thickness of five millimetres.

Cut out the cats from the dough and for every cat, cut two extra sets of feet (one set for the back and one set for the front).

Place shapes on baking tray lined with greaseproof paper and chill in freezer for 15 minutes before baking at 170 degrees Celsius for 12 to 16 minutes or until edges of cookies are just crisp. Cool cookies on wire racks until completely cold before decorating.

Use the cat cutter to cut coloured icing and attach to your cookie. To make your cat look extra scary you can use a sharp knife to cut out tiny triangles from the cats back and tail to make it look as if its fur is standing on end

Step-7

Add some eyes and a tiny triangle nose. You can use the small round cutter or make the eyes freehand by squashing two tiny balls of green icing and adding 2 black slits for the eyes.

Step-8

Use a small blob of stiff royal icing to stick one set of feet to the back of the cat and the other set to the front. Cover the front feet with the same colour icing as the cat's body. When the icing is completely dry you will be able to stand your cat up.
