There's nothing that screams Christmas, quite like the smell of mince pies freshly out of the oven. These super-fast mince pies feel a little like cheating as all the ingredients are shop bought, but they're super easy, super quick and super tasty! Made with thanks by Cherry Menlove

Ingredients:

2 blocks of shortcrust dessert pastry

Jar of mincemeat

100g unsalted butter

300g icing sugar

Step-1
Roll out two blocks of dessert pastry. Cut out circular shapes and pop them into a greased cake tin. Place one teaspoon of the best quality shop-bought mincemeat you can find in each pastry case.

Step-2
Roll out another piece of pastry and cut out star shapes for the tops of the minced pies. Place these tops on a separate baking sheet and then put both the tops and the filled pie cases in a pre-heated oven at 200°C. After about 15 mins, take the pies and tops out of the oven and allow to cool completely.

Step-3
Put 100 g of unsalted butter, 1 tsp of vanilla extract and 300 g of icing sugar in a food mixer. Whisk until light and fluffy and then use to fill a piping bag with a large nozzle. Pipe a big squirt of butter cream on to the top of the mincemeat then put a star shaped pastry lid on top of the buttercream.
