Ingredients

4oz/115g butter or margarine
4oz/115g caster sugar
2 medium eggs
1 tsp vanilla extract
4oz/115g self-raising flour
½ tsp baking powder

Plus any filling of your choice

 

Step 1
Preheat your oven to 170°C fan and brush Cake Release on the inside of the 6 cupcake bases of the silicone cupcake mould.

Step 2
Cream together the sugar and butter/margarine in a stand mixer or with an electric whisk until pale and fluffy. Beat in the eggs one at a time along with the vanilla extract. Sift in the flour and baking powder and mix until just incorporated. Spoon the mixture into the 6 wells of the cupcake mould and bake for 25-35 minutes until well risen and golden.
Step 3
Leave the cakes in the mould for 10 minutes before turning them out onto a cooling rack. Give the mould a wash in hot soapy water and dry well. Melt your first colour of Deco Melts according to the packet instructions. Coat the domed part of the cupcake mould with the Deco Melts and put in the fridge to set for 10 minutes. Add another layer if required so you have a shell approximately 3 or 4mm thick. When the Deco Melts have set hard, turn the mould inside out so that the domes pop out onto your work surface. You can fill the domes with any filling, such as buttercream & jam or even marshmallow fluff!
Step 4

Sit the domes on top of the sponge bases and decorate as desired with sprinkles adhered with edible glue, or spray them with edible glitter spray.

 

Your colourful cupcakes are now complete!
